Chef Journey: A One-Month Apprenticeship in Bakery & Pastry at Mandarin Oriental, Bangkok

In August 2023, a unique and enriching one-month professional education program took place, as a result of a collaboration between the School of the Oriental Hotel Apprenticeship Programme (OHAP) and the Tourism and Hospitality Management Division (THM) of Mahidol University International College (MUIC).

The program aimed to provide MUIC students with a comprehensive training in baking and pastry under the guidance of seasoned professionals from the esteemed Mandarin Oriental, Bangkok. The training was carried out across four departments: chocolate, afternoon tea desserts, baking, and banquets.

The culmination of this exceptional learning experience was marked by a certificate presentation held on August 29, 2023. This celebratory event not only recognized the dedication and hard work of the 10 student-participants but also signified the successful completion of the apprenticeship.

This exclusive apprenticeship initiative serves as a cornerstone in the experiential education offered to students within the Travel and Service Business Entrepreneurship program of the THM Division. Through this program, students have the opportunity to cultivate practical skills and amass valuable knowledge, which will undoubtedly contribute to their future careers.

By partaking in this immersive learning endeavor, students gain more than just theoretical insights. They acquire hands-on experience, allowing them to refine their abilities in a real-world setting. The exposure to various departments within the renowned Mandarin Oriental, Bangkok provides a holistic understanding of the baking and pastry industry.

Indeed, the collaborative apprenticeship between OHAP, THM-MUIC, conducted at the prestigious Mandarin Oriental, Bangkok, stands as a testament to the commitment of all parties involved to foster meaningful education and prepare students for success in the realm of Travel and Service Business Entrepreneurship.

The Mahidol University International College (MUIC) executive team led by Assoc. Prof. Dr. Yingyot Chiaravutthi, Associate Dean; Assoc. Prof. Dr. Chanchai Phonthanukitithaworn, Associate Dean for Corporate Communication and Information Technology; and AjarnWimonsiri Hemtanon, Associate Dean for Student Affairs; accompanied by Prof. Dr. Nopraenue Sajjarax Dhirathiti, Vice President for Global Partnerships and University Council of Mahidol University, and a faculty member of the Social Science Division of MUIC, along with staff members, laid a royal Pan-Pum (a traditional floral arrangement) in front of the statue of His Royal Highness Prince Mahidol of Songkla as part of paying obeisance to him and also in observance of the 57th Anniversary of the Royal Bestowal of the University Name and the commemoration of Mahidol University’s 138th Anniversary, on March 2, 2026 at the Office of the President.
